Chicken & Tau Kwa Crunch Salad

Serves: 2
Ingredients

1-2 chicken breasts
1 block tau kwa, cut into cubes
1 Japanese cucumber, sliced
1 carrot, julienned
A handful of cherry tomatoes, halved
1 tbsp toasted sesame seeds
Peanut Butter Dressing2 tbsp peanut butter
1 tbsp lime juice
1 tbsp warm water
A dash of sesame oil, optional
Chilli flakes, optional
How to make it

Season your chicken breasts with salt and pepper, then pan-sear until nicely browned and cooked through. Let them rest before slicing — this keeps the meat juicier and gives you nice, clean pieces for the salad.

While the chicken is cooking, prep everything else.

Slice the Japanese cucumber, julienne the carrot, halve the cherry tomatoes and cut the tau kwa into bite-sized cubes.

No need to fry the tau kwa. Keep it raw and let it do its thing. The firm tofu adds a pleasant chew and makes the salad feel much more substantial.

For the dressing, mix the peanut butter, soy sauce, lime juice, honey and warm water until smooth. Add a little more water if you prefer a thinner dressing. A touch of sesame oil and chilli gives it an extra kick.

Throw the vegetables, tau kwa and sliced chicken into a bowl. Drizzle over the peanut dressing, toss everything together and finish with toasted sesame seeds.
